From the time Columbus was founded in 1821 until the present, it has been a major center of culture, education and hospitality in this area. It was for this reason that the more than 100 antebellum mansions in the city were built as "town houses" for the planters in the rich Black Prairie. Some twelve to twenty of these gracious and architecturally significant homes, many of which are listed in the National Register of Historic Places, are open for the Annual Pilgrimage. Many notable "firsts" include: Franklin Academy, the first free public school in Mississippi which opened in 1821 and serves today as an elementary school; the Industrial Institute and College, the first state supported college for women in the United States, founded in 1884, and today is Mississippi University for Women (the "W"); Rural Hill, founded in 1905, was the site of one of the first consolidated schools in the United States, located just north of Columbus; Decoration (Memorial) Day, was first celebrated at Friendship Cemetery in1886; Waverley Plantation was the scene of the first Field Trial Hunts in America and the National Fox Hunters Association was founded here in 1893; the Agricultural and Mechanical College of Mississippi in Starkville, just a few miles west of Columbus, was founded in 1878 and is now Mississippi State University. We have tried to depict our grand heritage and gracious hospitality with the divider pages, which feature food set before backgrounds historically significant and unique to our area.Entertaining in the South is primarily done in the home. Hostesses pride themselves on serving their special dishes which are often cherished recipes handed down generation to generation. The recipes in this book reflect this, as so many renowned hostesses and cooks in this area have for the first time parted with those treasured recipes, thus providing us with “A Culinary Legacy of Columbus, Mississippi.”It has been our objective to give to you, the cook, the collector, the gift-giver, a book that is tasteful in all these aspects. All recipes have been tested at least twice, edited and proofed to ensure success with any dish you choose to prepare. It is my hope that all who acquire " enjoy it and cook with confidence.
