Description: Goodnow Farms Special Reserve Dominican Republic 70% Dark Chocolate Bar with Brown Butter The new Brown Butter bar is crafted with locally made, award-winning butter from High Lawn Farm. Goodnow Farms carefully browns High Lawn’s Berkshire Fresh butter, which is made with milk from only Jersey cows, and then pair it with their new cacao origin, Zorzal, from the Dominican Republic. The sweet, toasty notes of the brown butter pairs perfectly with the cinnamon raisin flavors of the Zorzal Communitario cacao. The butter also gives this bar an exceptionally creamy smoothness. As with all of their bars, this features cocoa butter which is pressed from the same Zorzal beans used to make the chocolate; a truly exceptional flavor experience. Goodnow Farms Limited Release Kerala India 77% Dark Chocolate Bar Limited Release bars are Goodnow Farm’s way of sharing the incredible fine flavor cacao they receive from farmers all over the world. Although they aren’t able to visit these farms personally, Goodnow Farms is so impressed with the quality and incredible flavors we just had to turn the beans into chocolate. As with all our bars these are made with cocoa butter we freshly press from the same beans we use to make the bars. Goodnow Farms makes only one batch of each of origin, so they’re only available for a limited time.These beans are coming from Dan O’Doherty at Cacao Services, which is the importer of record for GoGround Beans and Spices, based in Kerala, India. Go Ground is a social enterprise founded by Luca Beltrame and Ellen Taerwe, and their central post-harvest center is located in Undumbannoor Village, in the Idukki District of India. Go Ground sources their beans from 150 local farmers, paying prices around 25% higher than the local market price. Their staff consists primarily of nine women employed in bean receipt, quality check, fermentation, drying, storage and packaging operations, while two men purchase and pick up fresh beans a farm gate to ensure ripeness and quality.Dan is a geneticist who has spent time working with cacao farmers and producers all over the world to help them maximize the flavor and quality of their cacao beans. Goodnow Farms has been lucky enough to spend time with him in both Ecuador and Costa Rica, and have seen firsthand the unique expertise he brings to each origin with which he works.
